Peach Cobbler

This is the peach cobbler recipe my mom has always made! It reminds me of 4th of July at the beach.

5 to 7 fresh peaches, diced
1 stick butter, melted
1 cup and 1/4 cup sugar
1 cup self rising flour
1 egg
1 tsp vanilla

Heat oven to 350. Toss the peaches with 1/4 cup sugar. Place in a 8x8 baking dish. Mix together butter, 1 cup sugar, flour, egg and vanilla. Pour over peaches. Bake for 35 to 40 minutes. Cover with foil if it starts to brown quickly but isn't done. Serve warm with ice cream.

Apple Dumplings

These guys are amazing. This is a famous Pioneer Woman recipe that had read a dozen times and finally made it for a friend's birthday dinner. They are sweet and warm and perfect. I swear that you will love them and be craving them for the weeks to come!

2 whole Granny Smith Apples
2 cans (8 Oz. Cans) Crescent Rolls
2 sticks Butter
1-½ cup Sugar
1 teaspoon Vanilla
Cinnamon, To Taste
1 can (12 Oz.) Mountain Dew Soda

Peel and core the apples then cut into 8 slices. Wrap the crescent roll around each apple slice and place in greased 9x13 pan. Melt butter then add the sugar and just slightly stir. Add vanilla and stir then pour the mixture over the dumplings. Pour the mountain dew down the sides of the pan. Bake at 350 for 40 minutes. Serve right out of the oven with ice cream.

Cranberry Sauce

12 ounces cranberries
1 cup white sugar
1 cup orange juice

In a medium sized saucepan over medium heat, dissolve the sugar in the orange juice. Stir in the cranberries and cook until the cranberries start to pop (about 10 minutes) then continue stirring until the cranberries have cooked down somewhat.  Remove from heat and place sauce in a bowl. Cranberry sauce will thicken as it cools.
