Grilled Brown Sugar Chili Pork Tenderloin


Easy, delicious, flavorful! That perfectly sums up this grilled pork tenderloin. This was Gray's pick for his birthday dinner and it was a great pick! This recipe is adapted from Katie's Cucina.

2 pork tenderloins
2 tbsp chili powder
2 tbsp brown sugar
1 tsp paprika
1/4 tsp cinnamon
2 tbsp olive oil

In a bowl combine the chili powder, brown sugar, paprika and cinnamon. Rub the olive oil over the pork tenderloin then rub the chili powder mixture into the pork tenderloin. Heat grill over medium high heat and grill for 10 minutes on each side or until the pork tenderloin is cooked through. Remove from grill and let rest for 10 minutes before slicing.

Grilled Brown Sugar Balsamic Chicken


I love an easy grilled chicken recipe and this one was perfect and so flavorful! My kids devoured all of theirs and were asking for more even though there wasn't any more! This recipe is from Delightful E Made.

3-4 boneless skinless chicken breasts
1/2 cup balsamic vinegar
1/3 cup olive oil
3 tbsp brown sugar
2 tsp minced garlic
1/2 tsp ground pepper
1/2 tsp salt

Whisk the balsamic vinegar, olive oil, brown sugar, garlic, pepper and salt together. Place the chicken in a ziploc bag and pour the marinade over the chicken. Let marinate for 3-8 hours. Grill chicken over medium heat 6-8 minutes on each side or until the chicken is cooked through.

Grilled Chicken Pitas


New favorite! This chicken had great flavor since it was grilled and I loved topping it with fresh ingredients and tzatziki. Everyone devoured this meal.

3 boneless skinless chicken breast
4 tbsp olive oil
4 tbsp lemon juice
2 tbsp plain greek yogurt
1 tbsp red wine vinegar
2 tsp minced garlic
2 tsp salt
1 tsp thyme
1 tsp oregano
1/2 tsp black pepper
4 pitas
cucumber
tomato
lettuce
tzatziki

Whisk together the olive oil, lemon juice, plain greek yogurt, red wine vinegar, garlic, salt, thyme, oregano and black pepper. Place chicken breasts in a plastic ziplock bag and pour the marinade over the chicken. Marinate for 1-12 hours.  Heat grill over medium high heat and grill the chicken for 7-9 minutes on each side or until the chicken is cooked through. Let sit for 5 minutes then slice and place on the pita with toppings.

Grilled Balsamic Garlic Pork Tenderloin


Pork tenderloin is a favorite around here. Anytime we have it my 2 year old refers to it as steak and devours it. I'm not about to correct her mistake because hello, she's eating it! Ha. This recipe was a great and easy grilled pork tenderloin recipe and the best part was that I had all the ingredients on hand already. Recipe adapted from Tide and Thyme.

2 pork tenderloins
4 tbsp balsamic vinegar
4 tbsp olive oil
3 tsp salt
2 tsp black pepper
8 cloves garlic (minced)

Whisk together the balsamic vinegar, olive oil, salt, pepper and garlic. Pour over the pork tenderloins and let marinate for at least 2 hours but up to 12. Heat your grill to medium high heat then cook the pork tenderloins for 12-14 minutes on each side or until cooked to desired temperature. Remove from heat and let rest for 5 minutes before slicing and serving.

Grilled Garlic Green Beans


Any recipe that I just have to quickly throw together and put on the grill is a total win for me! These green beans on the grill turned out so well. They were the perfect side dish to some chicken we grilled.

1lb fresh green beans (cleaned and snapped)
1 1/2 tbsp olive oil
2 garlic cloves (minced)
salt and pepper

Toss the green beans with olive oil, garlic, salt and pepper.  Wrap in a foil packet and grill for 6 minutes. Flip and grill for another 6 minutes. Remove and serve.

Grilled Ranch Red Potatoes





We love to grill potatoes. It's such an easy side dish when grilling and this recipe just came out of having some ranch seasoning in the pantry and wanting to use it up! They were delicious!

8-10 red potatoes 
3 tbsp olive oil
1 1/2 tbsp ranch seasoning

Wash the red potatoes. Cut each potato in half. Toss the potatoes with olive oil and ranch seasoning. Grill on each side until fork tender.

Grilled Garlic Lime Taco Chicken


Chicken legs are not my favorite but my people just love them so I make them.  This recipe was really flavorful and so easy!

10-12 chicken legs
3 tbsp olive oil
3 tbsp lime juice
2 tsp minced garlic
1 packet taco seasoning

Whisk together the olive oil, lime juice and garlic. Pour over the chicken legs then toss in taco seasoning. Grill over medium high heat for 12-15 minutes or until the chicken is cooked through.

Grilled Corn with Basil Butter


There is nothing better than good corn in the summertime! I love glamming up corn with something fancy and this basil butter gave it such great flavor and was very easy to make! This recipe is from adapted from Let's Dish.

1/2 cup butter (room temperature)
1/4 tsp salt
1/4 tsp pepper
1 tsp garlic (minced)
1/4 cup fresh basil (chopped)
6 ears of corn (husked and washed)
2 tbsp vegetable oil

Mix together the butter, salt, pepper, garlic and basil. Place back in the refrigerator until ready to use. Rub the corn with the vegetable oil and place on the grill. Grill for 10-12 minutes, rotating often. Remove from grill and rub with basil butter.

Grilled Honey Citrus Chicken with Basil Butter


This chicken was great! Do not skip out on the butter, it brings to much flavor to this dish. Even my "sauce" hater loved the extra the butter brought to the chicken. This recipe is from Cookies and Cups.

Chicken
2lbs boneless skinless chicken breasts
juice of 2 limes
juice of 2 lemons
2 tbsp honey
1 tsp salt
1/2 tsp pepper
2 cloves minced garlic

Butter
1/2 cup salted butter (softened)
1/2 tsp garlic powder
1/4 cup fresh basil leaves (chopped)

In a small bowl whisk together all the marinade ingredients. Pour over chicken and let marinate for 3-8 hours. In a small bowl combine the butter, garlic powder and basil leaves. Refrigerate until ready to use. Grill chicken over medium high heat until it is cooked through. Remove from grill and top with basil butter.

Avocado Club Burgers


I just made these up on a whim.  I actually loved using the baguette as bread, it just changed up the burgers. Plus all of the delicious toppings just make it that much more yummy.

2 lbs ground beef
1 1/2 tsp seasoning salt
1 lb bacon (fried crsip)
1 avocado (sliced)
2 tomatoes (sliced)
romaine lettuce
6 slices cheddar cheese
mayonnaise 
1 baguette (sliced in half and then into 6 "buns")

Mix the ground beef with the seasoning salt and then form 6 patties. Grill the burgers over medium heat until they have reached your desired doneness. Top with cheddar cheese slices. Lightly toast the baguette buns. Spread mayonnaise on the bun then top with the burger patty, 3 slices of bacon, tomato, avocado, lettuce.

Chicken Souvlaki Kabobs


Is there anything better than grilling in the summer? I think not! This recipe was a hit with all of my people. Every bite was eaten and there was great disappointment when it was all gone. This recipe was adapted from Oh Sweet Basil.

4 chicken breast cut into pieces
zest of 2 lemons
1/4 cup fresh lemon juice
1/3 cup olive oil
3 garlic cloves (minced)
1 tsp sugar
2 tbsp fresh oregano (chopped)
1 tbsp parsley (chopped)
2 tsp salt
3 bell peppers (i used red, yellow and orange)

Whisk together the lemon juice, olive oil, lemon zest, garlic, sguar, oregano, parsley and salt. Pour over the chicken and marinate for 2 hours. Cut the bell peppers into 1 inch pieces. Skewer the bell peppers on the end then add the chicken and finish with the bell peppers.  Grill over medium heat, turning often. About 12-15 minutes or until the chicken is cooked through.

Rosemary Ranch Chicken Kabobs


This recipes came about after looking at several different similar recipes.  This is just an easy version without any mayo in them since the hubs hates mayo.

3 boneless skinless chicken breasts
1 tbsp rosemary (chopped)
1/2 cup olive oil
1 pkg ranch dressing mix

Cut chicken breasts into cubes. In a small bowl whisk together olive oil, rosemary and ranch dressing mix. Marinate for 3 to 12 hours. Place the chicken on the screwers and grill over medium high heat until it is cooked through.

Grilled Margherita Pizza


My mouth is watering just looking at this picture again. This is the perfect summer pizza recipe, it's so fresh and delicious.  I love getting to use my basil plant.  I started making this last summer and we have enjoyed it again this summer.

Thin Crust Pizza Dough (it made 5 pizzas the same size as the one pictured)
Pizza Sauce
1 lb Fresh Mozzarella (cut into thin slices)
10-12 Basil Leafs (shredded)

Split the dough into 5 balls.  Roll out each ball until it is thin.  Heat the grill to medium and spray with grill spray.  Place two of the crusts down on the grill and cook for several minutes.  Carefully lift to see the doneness.  Once it has some grill marks and is no longer doughy, flip over.  Top with the pizza sauce and fresh mozzarella.  Once the pizza is done remove from grill and top with basil.  Continue with the remaining pizza doughs.

10 Minute Grilled Lemon Asparagus


In my opinion, the best way to eat asparagus is grilled.  And lemon makes it 10 times better.  This is one of my favorite new recipes.  I have a feeling we will be making it more often.  So easy. So delicious. I got this recipe from Creme de la Crumb and adapted it somewhat.


1 bunch of asparagus
1/4 cup fresh lemon juice
1 tsp garlic powder
salt and pepper to taste

Trim the asparagus.  Toss in lemon juice, garlic powder, salt and pepper. Grill over medium heat for 7 to 8 minutes, turning as it grills.  Remove from heat and serve.

Mexican Burgers


This burger is right up my alley! Yum yum yum.  I just love grilling out, it's the one thing I love about summer. This recipe is adapted from Dessert Now, Dinner Later.

1lb ground beef
3/4 tsp minced garlic
1/2 tsp salt
1/8 tsp ground black pepper
1 1/2 tbsp taco seasoning
4 slices pepper jack cheese
4 hamburger buns
guacamole
pico de gallo (or sliced tomatoes if you aren't a pico fan)

Combine the ground beef with the minced garlic, salt, black pepper and taco seasoning. Divide and form into 4 patties.  Grill the burgers over medium high heat until cooked to desired temperature. Top with pepper jack cheese slices and let the cheese melt.  Remove from grill.  Place the buns face down on the grill until lightly browned. Remove and top with burger patty, guacamole and pico de gallo.

Grilled Bruschetta Chicken


This chicken has been on my mind ever since I fixed it a few days ago. Oh my gah.   It had so much flavor!!!  I love grilling chicken and this recipe was the bomb.  Adapted from BlogChef.net.


4 boneless skinless chicken breasts
1 cup shredded mozzarella cheese

Rub
2 tbsp brown sugar
juice of 1 lime
1 tbsp olive oil
2 tbsp chili powder
1 tbsp ground cumin
1 1/2 tsp salt
1 tsp ground black pepper

Glaze
1/2 cup ketchup
1/4 cup balsamic vinegar
1 tsp oregano
4 tbsp brown sugar

Bruschetta
6 roma tomatoes (diced)
2 garlic cloves (minced)
3 tbsp olive oil
2 teaspoons balsamic vinegar
2 tbsp fresh chopped basil
1/2 tsp kosher salt
1/4 tsp ground black pepper

Combine all the ingredients for the rub together and rub down the chicken.  Place in the refrigerator for 1 hour.  In a bowl combine all the ingredients for the bruschetta topping and place in the refrigerator.  Right before grilling, whisk together all the ingredients for the glaze. Once the chicken has marinated for an hour, remove from the refrigerator and place on the grill over medium high heat.   When the chicken is almost done start brushing it with the glaze. Once the chicken is cooked through, top with the mozzarella and remove from the grill once the cheese has melted.  Top with the bruschetta topping and serve.

Easy Grilled Veggie Kabobs


These kabobs are just silly easy.  And yet, they are great!  The Italian dressing is just enough to give the vegetables a little extra flavor without over powering them.  This simple recipe is from Six Sister Stuff.

1 red bell pepper
1 green bell pepper
1 cup fresh mushrooms
1 large zucchini
1 large yellow squash
1 cup cherry tomatoes
1 red onion
1 cup Italian dressing

Chop the vegetables into large pieces. Place the vegetables into a bowl and coat with dressing. Let marinade for 1 hour.  Skewer the vegetables.  Grill over medium heat until the vegetables are tender and slightly charred.

Grilled Stuffed Mini Peppers


This is the EASIEST thing ever to make and they are so dang delicious!  Last summer I found a grilled mini pepper recipe but it was complicated and involved a lot of ingredients and I thought, hmmm what about chive and onion cream cheese instead.  So I tried and it and fell in love!  These would make an awesome appetizer or a great side when you are grilling.

10-12 mini bell peppers
8 oz chive and onion cream cheese

Remove stems and slice the bell peppers in half. Remove the seeds and ribs.  Carefully stuff with the chive and onion cream cheese.  Grill over medium heat until the peppers start to get slightly charred.  Remove from grill and serve.

Grilled Veggie Gyros


After a weekend out of town I knew we needed some veggies in our life!  I had been eyeing this recipe for a while and it was a great opportunity to try it out! Oh my yum!!! These Gyros were amazing! This recipe is slightly adapted from Oh My Veggies.

1/4 cup olive oil
2 tbsp lemon juice
1 tsp ground cumin
1/2 tsp dried oregano
2 cloves garlic (minced)
Salt and pepper to taste
3 portabella mushrooms
1 red pepper
1 large zucchini
1 red onion
4 pitas or flatbread
1 cup shredded lettuce
1 tomato (diced)
Tzatziki Sauce 

Slice the veggies into strips.  In a small bowl whisk together the olive oil, lemon juice, cumin, oregano, garlic, salt and pepper. Pour over veggies and lightly toss.  Let the veggies marinate for 15 to 20 minutes. Heat the grill over medium heat and place tin foil down.  Set the veggies in a single layer over the foil. Grill for 5 to 8 minutes then flip. Grill until all of the veggies are tender, remove to a plate.  Lightly heat the pita bread on the grill then remove.  Top the pita with veggies, lettuce, tomato and tzatzizi sauce.

Grilled Dill Red Potatoes


In the summer this is our favorite side dish!  We grill a lot and these are so quick and simple to put together.  You will be surprised by how delicious these are!

6-8 Red Potatoes
1/4 cup Olive Oil
1/4 tsp Salt
1/4 tsp Pepper
1/2 tsp Dried Dill

Wash the potatoes and slice in half.  Toss in olive oil, salt, pepper and dill.  Grill over medium heat, flip when they start to brown on one side.  Continue to grill until they are fork tender. Remove from grill and serve.
