Crock Pot Black Bean Soup


Black Beans are a big hit at our house and when I saw this easy crock pot recipe I had to try it! It was so good! We topped it with a little cheese and sour cream and it was delicious.  It was still pretty warm out on the night I made this but it's going to be great for cold winter nights or snow days! This recipe was adapted from The Country Cook.

3 cups vegetable or beef broth
28oz can crushed tomatoes
4 16oz cans black beans
1 small onion (diced)
2 cloves garlic (minced)
1 1/2 tbsp chili powder
1 tsp cumin
salt and pepper to taste
1/4 cup water
4 tbsp cornstarch

Place the broth, crushed tomatoes, black beans, onion, garlic, chili powder, cumin, salt and pepper in the crock pot.  Cook on low fro 5-8 hours. After cooking use a potato masher and mash some of the beans. In a small bowl whisk together the water and cornstarch then stir it into the soup and cook for another 30 minutes. Serve with cheese and sour cream.

Crock Pot Brown Sugar BBQ Chicken Sandwiches


I was going to make a different recipe this night but I couldn't get one of the ingredients I needed at the grocery store and I just didn't have it in me to go to another store. I created this on a whim and it was a great recipe. The kids loved the sweetness from the brown sugar.

3-4 chicken breasts
1 cup bbq sauce
1/3 cup brown sugar

Place the chicken breasts in the bottom of the crock pot. Sprinkle with brown sugar and pour the bbq sauce on top. Cook for 6-8 hours on low.  Shred the chicken in the sauce and serve on buns.

Crock Pot Chicken with Bacon Gravy


I made this the first week of school because I needed easy!  This recipe was delicious, flavorful and super easy to throw in the crock pot. I served it over brown rice.

3-4 boneless skinless chicken breasts
6 slices bacon
2 packages chicken gravy
1 1/2 cups water
1 tsp minced garlic
1 tsp thyme
2/3 cup cream

Place the chicken breasts in the bottom of the crock pot then top with bacon, garlic and thyme. Whisk together the chicken gravy and water and pour over the chicken. Cook on low for 6-8 hours. Shred the chicken in the gravy and stir in the heavy cream and cook uncovered for 20 minutes then serve.

Crock Pot Cube Steak and Gravy


I had a bunch of cube steak in the freezer and went in search for a good and easy recipe. This had great flavor and was so easy to throw together. This recipe is from The Country Cook.

1 1/2 -2lb cube steak
1 can cream of chicken soup
1 can french onion soup
1/2 cup water
3tbsp cornstarch
2tbsp cold water

Place the cube steak in the bottom of the crock pot. Whisk together the chicken soup, french onion soup and water. Pour the mixture over the cube steak. Cook on low for 6 hours.  After 6 hours whisk together the cornstarch and water then stir into the gravy. Cook for 30 minutes to 1 hours. Serve the cube steak with the gravy over top.

Crock Pot Brown Sugar Baked Beans


These baked beans turned out so well! I wasn't really sure how they would be but I think everyone liked them and there weren't a lot of leftovers. This recipe was adapted from Sing For Your Supper

3 (28oz) can pork and beans
1 small onion (diced)
1/2 cup bbq sauce
1/2 cup ketchup
3/4 cup brown sugar
2 tbsp yellow mustard
5 slices bacon

Place the pork and beans in the crock pot. Mix in the onion, bbq sauce, ketchup, brown sugar and yellow mustard. Layer the bacon on top. Cook on low for 4-5 hours. Stir halfway through. Remove bacon pieces and serve.

Crock Pot Beef and Broccoli


I was pretty sure Gray and I would love this meal but I wasn't sure how it would go over with the younger crowd. The 2 year old was in a mood so I'm pretty sure it didn't matter what I was serving for dinner, but my 9 year old loved this and took the leftovers to school the next day! It was pretty simple to throw together and I loved that it was a good healthy dinner option. This recipe was adapted from Table for Two.

1 boneless beef chuck roast (cut into strips)
1 cup beef broth
1/2 cup soy sauce
1/3 cup brown sugar
1 tbsp sesame oil
3 cloves minced garlic
3 cups broccoli (chopped into bite size pieces)
2 tbsp cornstarch

Place the beef in the bottom of the crock pot. Whisk together the beef broth, soy sauce, brown sugar, sesame oil and garlic. Pour over the beef. Cook on low for 4-6 hours. Remove 4 tbsp of the broth and whisk it with the cornstarch then add back to the crock pot stirring well. Stir in the broccoli and cook for 30 minutes. Serve over brown rice.

Crock Pot Chicken Burrito Bowls


I love any kind of meal that can easily be customized for each person and that exactly how these were. Super simple to throw in the crock pot and everyone was happy putting whatever toppings they wanted on their own burrito bowls.

2 large boneless chicken breasts
2 tsp onion powder
2 tsp garlic powder
2 tsp chili powder
2 tsp cumin
1/2 tsp salt
1 (15oz) can diced tomatoes
1 1/2 cup chicken broth
2 cans black beans
2 cup uncooked instant brown rice
colby jack cheese
toppings: salsa, guacamole, sour cream, lettuce, onions

Mix together the onion powder, garlic powder, chili powder, cumin and salt. Rub the chicken breasts with the seasoning and place in the bottom of the crock pot. Top with diced tomatoes and chicken broth. Cook on low for 6 hours. Shred the chicken and stir in the black beans and let cook for another 30 minutes. Cook the instant rice according to directions. Place the rice in the bottom of the bowl then top with the chicken mixture, cheese and other toppings.

Crock Pot Honey Cajun Pork Tenderloin


This recipe was really quick to put together.  The pork tenderloin had great flavor and was super tender, I thought I might be able to slice it into medallions but it completely fell apart.  This recipe was adapted from The Skinny Fork.

 2 pork tenderloins
1 cup chicken broth
2 tbsp honey
1 tbsp dried oregano
1 tbsp paprika
1 tbsp chili powder
1/2 tbsp salt
1 tsp pepper

In a small bowl combine the oregano, paprika, chili powder, salt and pepper. Rub the pork tenderloin with the seasoning and brown in a skillet on each side. Place the pork tenderloins in the bottom of the crock pot. Whisk together the chicken broth and honey then pour over the pork. Cook on low for 6-8 hours.

Loaded Chicken Tostadas


These chicken tostadas are so easy to make! With the chicken cooked in the crock pot all you have to do is layer them and throw them in the oven for a few minutes then they are done!

1 recipe crock pot mexican shredded chicken
8 tostada shells
1 can refried beans
2 cups shredded monterrey jack cheese
toppings: lettuce, tomato, salsa, sour cream, guacamole

Heat oven to 350.  Place the tostada shells on a lined sheet pan. Spread a spoonful of refried beans over the shell then top with chicken and cheese. Bake for 12-15 minutes in the oven. Remove and top with your choice of toppings.

Crock Pot Mushroom and Onion Italian Beef Sandwiches


I love a good crock pot recipe and these sandwiches were so tender and flavorful. Everyone was very pleased with them at dinner time.  This recipe was adapted from Will Cook for Smiles.

4 cups beef broth
1 chuck roast
1 garlic bulb
1 1/2 tsp dried basil
1 1/2 tsp dried parsley
1 tsp dried oregano
1 tsp dried thyme
1 large yellow onion
1/2 tbsp sugar
1 tsp salt
1 cup sliced fresh mushrooms
6 club rolls
6 slices provolone cheese

Place the chuck roast in the bottom of the crock pot. Using a sharp knife cut slits in the top of the roast and place the garlic cloves down in the beef. Sprinkle the basil, parsley, oregano, thyme, sugar and salt over the roast. Cut rings of the onion and place on top. Pour the beef broth over the top of the roast and cook on low for 6-8 hours.  Remove the chuck roast from the crock pot and shred. Place back in the crock pot and stir in the mushrooms. Let cook for 30 minutes. Slice the club rolls and layer the with beef mixture and provolone cheese then serve.

Crock Pot Honey Garlic Chicken


Sometimes the most delicious recipes are born out of recipes that you think are one thing (because you never read fully through) and then realize, wait, that's not what I want to make for dinner!  Ha! That's what happened on the day I made this recipe.  It was just sort of thrown together and ended up being great!

3 chicken breasts
1 cup chicken broth
1/2 cup honey
2 tbsp soy sauce
1 tbsp hot sauce
6 garlic cloves (minced)
2 tsp onion powder
1/2 tsp salt

Place the chicken in the bottom of the crock pot.  Whisk the chicken broth, honey, soy sauce and hot sauce together. Stir in the garlic cloves, onion powder and salt. Pour over the chicken breasts. Cook on low for 6-8 hours.  Remove the chicken from the crock pot and shred.  Add back to the crock pot and cook for 15 more minutes then serve.

Crock Pot Sticky Chicken Legs


My oldest loves a chicken leg.  I don't know what it is but he gets so excited any time I make chicken legs. These chicken legs had great flavor and were so simple to throw in the crock pot and let cook all day. This recipe was adapted from Mantitlement.

3-4 lbs chicken legs
1 1/2 cup BBQ sauce
1/4 cup teriyaki sauce
1/4 cup honey

Place the chicken in the bottom of the crock pot. Whisk together the bbq sauce, teriyaki sauce and honey. Pour the mixture over the chicken. Cook on low for 6-8 hours.  Remove from the crock pot and spoon the sauce back over the chicken then serve.

Crock Pot Nacho Soup


Does anyone else get completely sucked in by the Tasty videos on facebook?  Okay so sometimes they don't look good at all but other times, I have to make the recipe right away! That was the case with this soup, I saw it on Tasty then made it like 3 days later.  It was delicious and a big hit in our house!

2 lbs boneless skinless chicken breasts
1 large onion (diced)
2 cloves garlic (minced)
1 tbsp chili powder
2 tsp cumin
1 tsp paprika
1 tsp salt
1 tsp black pepper
6 cups chicken broth
1 can diced tomatoes
1 can black beans (drained)
1 cup heavy cream
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese
serve with: extra cheese, sour cream and tortilla chips

Mix together the chili powder, cumin, paprika, salt and black pepper. Rub all over the chicken breasts then place in the bottom of the crock pot. Top with onions and garlic. Pour the chicken brother over the chicken and let cook on low for 6 hours. Remove the chicken and shred then return it to the crock pot. Pour in the diced tomatoes, black beans, cheeses and heavy cream. Cook on low for another hour. Serve with toppings as desired.

Crock Pot Apple Cider Pulled Pork


Any sort of pulled or shredded meat is pretty much guaranteed to be a hit in my house. This pork would be great by itself or on a bun like I served it. This recipe is adapted from Mostly Homemade Mom.

1 pork butt roast
3 tbsp chili powder
1 tbsp cumin
1 tbsp salt
1 tsp garlic powder
1 tsp pepper
1/2 tsp dried mustard
2 cups apple cider
1 jar bbq sauce

 Mix together the chili powder, cumin, salt, garlic powder, pepper and dried mustard.  Rub the seasonings all over the pork roast. Place in the bottom of the crock pot.  Pour the apple cider over the top. Cook on low for 8-10 hours. Remove the roast from the crock pot and shredded. Pour out the juices and keep 1 1/2 cups reserved. Whisk together the juice and 1 1/2 cup bbq sauce. Place the shredded pork back in the crock pot and mix in the sauce. Let cook for 15 minutes then serve.

Crock Pot Chicken Stew


Does anything sound more comforting than this stew on a cold winter night?  It was great and everyone in my family absolutely loved it.  Plus it's in the crock pot so that's a total mom win for me! This recipe is adapted from Movita Beaucoup.

1 lb boneless skinless chicken breasts (cut into cubes)
2 medium onions (diced)
1 cup diced carrots
2 garlic cloves (minced)
3 medium potatoes (peeled and diced)
1 tsp dried thyme
3 1/2 cups chicken broth (divided)
1 cup frozen peas
1 cup frozen corn
1/4 tsp black pepper
1/2 cup flour

Place onions, carrots, garlic and potatoes in the bottom of the crock pot. Sprinkle with thyme.  Place the chicken over the vegetables then top with 3 cups of chicken broth. Cook for 6-8 hours on low. 40 minutes before serving stir in the peas, corn and pepper. Let cook for 15 minutes. In a bowl whisk together the remaining 1/2 cup of chicken broth and the flour then add to the crock pot and cook for a remaining 25-30 minutes or once it has thickened up.

Crock Pot BBQ Ranch Chicken Sandwiches


This was a recipe born out of plans changing and trying to make dinner out of what I had on hand! These sandwiches turned out great, the ranch seasoning gave them a nice tangy taste and the chicken just fell apart.

2-3 boneless skinless chicken breasts
1 jar bbq sauce
1 ranch seasoning packet
buns 

Place the chicken in the bottom of the crock pot.  Whisk together the bbq sauce and ranch seasoning. Pour the bbq sauce mixture over the chicken and cook on low for 7-9 hours. Shred the chicken and serve on lightly toasted buns.

Crock Pot Cream Cheese Chicken Chili


I love a crock pot dinner, especially on a cold night.  This chili was a big hit with my family, my little guy took the leftovers for lunch for two days, a sure sign that he likes it!  It was super easy and had great flavor!  This recipe was adapted from The Magical Slow Cooker.

2 lbs skinless boneless chicken breasts
1/4 tsp salt
1/4 tsp pepper
1 tbsp chili powder
2 (15oz) cans pinto beans
1 (15oz) can diced tomatoes
1 tsp minced garlic
1 onion (diced)
3 tsp diced pickled jalapeno peppers
32oz chicken broth
8oz cream cheese
fritos, sour cream and cheese for serving

Place the chicken in the bottom of the crock pot. Sprinkle the salt, pepper and chili powder over the chicken. Add the pinto beans, diced tomatoes, garlic, onion, jalapenos and chicken broth. Cook on low for 7-9 hours. Shred the chicken and place back into the chili.  Cut the cream cheese into small cubes and stir into the chili. Let cook for 15 minutes then stir then cook for 15 more minutes. Serve with toppings.

Crock Pot Garlic Brown Sugar Terikyaki Pork


I was personally excited about this recipe, I wasn't sure what my children would think though but they both devoured it! This will be one that I put into our regular rotation for sure. This recipe was adapted from Yellow Bliss Road.

2-3lb pork pork loin
1/2 cup brown sugar
2 tbsp minced garlic
1/2 cup teriyaki sauce

In a bowl whisk together the brown sugar, garlic and teriyaki sauce. Place the pork loin in the bottom of the crock pot then pour the sauce over. Cook on low for 6-7 hours.  Shred and serve over rice or mashed potatoes.

Crock Pot BBQ Meatball Sandwiches


I made these one Saturday when we had a night football game that we wanted to watch on TV. It was perfect because at dinner time I just had to throw these sandwiches together quickly. The BBQ sauce has this tangy aspect too it that was different but really enjoyable. These were a hit and would make a great busy weeknight dinner too! Recipe is adapted from Amanda's Cookin.

Meatballs:
1/2 cup breadcrumbs
1 tsp onion powder
2 tsp chili powder
1/2 tsp cumin
1 tsp salt
1/2 tsp black pepper
1 egg
1 tbsp olive oil
1 lb ground beef

Sauce:
2 cups ketchup
1/4 cup apple cider vinegar
2 tbsp worcestershire sauce
2 tbsp brown sugar
1 tbsp chili powder
1 tbsp grlic powder

4-6 Rolls
4-6 slice provolone cheese

In a large bowl combine the breadcrumbs, onion powder, chili powder, cumin, salt and black pepper. Add the ground beef, egg and olive oil and combine. Using your hands, form meatballs and place in the bottom of the crock pot. In a bowl whisk together all of the ingredients for the sauce. Spoon the sauce over each meatball and pour over the remaining sauce. Cook on low for 7-8 hours.  Once the meatballs are done, split the rolls and lightly toast. Top with meatballs and cheese.

Crock Pot Hurry Chicken


My son LOVES chicken on the bone. It makes him so happy if I fix any sort of chicken on the bone. I don't know what it is. I honestly kind of hate chicken still on the bone. They had chicken legs on serious sale the other week so I had to snatch up a few packs. This chicken turned out so tender and flavorful! It's a keeper for sure! This recipe is adapted from Belly Full

1/2 cup brown sugar
1/2 cup ketchup
1/2 cup chicken broth
1 packet onion soup mix
1/4 tsp salt
1/8 tsp pepper
sprinkle of red pepper flakes
8-10 chicken legs

Spray your crock pot with cooking spray.  In a mixing bowl whisk together the brown sugar, ketchup, chicken broth, onion soup mix, salt, pepper and red pepper flakes. Place the chicken legs in the bottom of the crock pot then pour the sauce over the chicken, coating each pieces. Cook on low for 7-9 hours.
