Chicken Noodle Skillet


Okay, let’s see if this works, I’ve been having so many blogger issues. Thought they were resolved...well not resolved but that I had figured out a way to get around them but I’m having trouble again. So frustrating! Yay it appears this is working though! And I;m so happy to share this delicious recipe with you! This recipe was adapted from Scattered Thoughts of a Crafty Mom.

2 tbsp butter
1/2 cup diced onion
1 tsp minced garlic
1 tsp granulated chicken bouillon 
1/2 tsp salt
1/2 tsp pepper
3 cups chicken broth
4 cups egg noodles
1 rotisserie chicken (deboned and shredded)
3/4 cup heavy cream
1 cup frozen corn
1 cup frozen peas and carrots

Melt the butter in a large skillet and saute the onion until translucent. Stir in the garlic for 1 minute. Then stir in the the chicken bouillon, salt and pepper then pour in the chicken broth and stir in the egg noddles and chicken. Turn the heat up and cover. Let cook for 6-7 minutes, stirring occasionally. Stir in the cream and reduce the heat to medium low. Stir in the corn, peas and carrots and cook until the mixture thickens.

Skillet Biscuit Pot Pie


Well, after an untended break, I'm back! Christmas got crazy then the start of the new year got even crazier but I'm finally sitting down to blog and hopeful that I can stay on top of it!  I made this recipe several weeks ago and it instantly became a favorite! I made it in my small skillet but next time I'll double it and put it in my big skillet because there wasn't a single bite left and everyone wanted more! This recipe was adapted from Kylee Cooks.

1 tbsp olive oil
1 tbsp butter
1 cup onion (chopped)
1 tsp thyme
1 tsp minced garlic
1 tsp salt
1 tsp pepper
1/4 cup flour
2 cups chicken stock
1/4 cup half and half
1 lb chicken breast (cooked and cubed)
1 1/2 cups frozen peas and carrots
8 refrigerated canned biscuits
1 egg

Heat oven to 400. In a cast iron skillet heat the oil and butter. Saute the onion until soft and stir in the thyme, let cook for another minutes. Stir in the garlic then season with salt and pepper. Whisk in the flour. Cook for two to three minutes. Whisk in the chicken stock them the half and half. When the mixture begins to thicken stir in the chicken and let simmer for 5 minutes then stir in the frozen peas and carrots. Top with the biscuits. Whisk the egg in a bowl then brush over the biscuits. Bake for 20-25 minutes or until the biscuits are browned on top. Remove from oven and let cool for 5-8 minutes before serving.

Buttermilk Chicken Tenders


I just made these a little over an house ago, it was such an easy lunch! I had plans to make some fancy sauces but I was just tired so I pulled out the big bag of chickfila sauces and served those instead and they were great! This recipe is from Cassie Craves.

1 lb chicken tenderloins
1 1/2 cups buttermilk
1 cup flour
1 tsp seasoning salt
1/2 tsp poultry seasoning
1/4 tsp black pepper
oil for frying

Place the chicken tenderloins in a bowl a coat with buttermilk.  Let sit for 15 minutes. In a separate bowl combine the flour, seasoning salt, poultry seasoning and black pepper.  Coat the chicken tenders in the flour mixture. Heat about one inch of oil in a skillet over medium heat. Cook the chicken tenders until they are golden brown and cooked through. Remove and let cool down before serving with your favorite sauces.

Crock Pot Brown Sugar BBQ Chicken Sandwiches


I was going to make a different recipe this night but I couldn't get one of the ingredients I needed at the grocery store and I just didn't have it in me to go to another store. I created this on a whim and it was a great recipe. The kids loved the sweetness from the brown sugar.

3-4 chicken breasts
1 cup bbq sauce
1/3 cup brown sugar

Place the chicken breasts in the bottom of the crock pot. Sprinkle with brown sugar and pour the bbq sauce on top. Cook for 6-8 hours on low.  Shred the chicken in the sauce and serve on buns.

Crock Pot Chicken with Bacon Gravy


I made this the first week of school because I needed easy!  This recipe was delicious, flavorful and super easy to throw in the crock pot. I served it over brown rice.

3-4 boneless skinless chicken breasts
6 slices bacon
2 packages chicken gravy
1 1/2 cups water
1 tsp minced garlic
1 tsp thyme
2/3 cup cream

Place the chicken breasts in the bottom of the crock pot then top with bacon, garlic and thyme. Whisk together the chicken gravy and water and pour over the chicken. Cook on low for 6-8 hours. Shred the chicken in the gravy and stir in the heavy cream and cook uncovered for 20 minutes then serve.

Quick and Easy Chicken Lo Mein


This is officially one of my new favorite dinners.  I'm a harsh critic on my own cooking and it takes a lot for me to exclaim "oh this is so good" after just one bite. But this had me at first bite and I know I will be making it a lot! The great thing is you can use whatever veggies your family likes, I used onion, mushrooms, red, yellow and orange peppers. But it would be so great with broccoli, carrots, sugar snap peas, bok choy, so many things! I used lo mein noodles from the freezer section but really any will work!

2-3 boneless skinless chicken breasts (cut into bite size strips)
4 cups sliced or diced vegetables
1 tbsp olive oil
21 oz Lo Mein noodles
1/2 cup soy sauce
1/4 cup chicken stock
1 tbsp honey
1 tbsp brown sugar
1/4 tsp ground ginger
1 tsp minced garlic
2 tbsp cornstarch

 Heat a skillet over medium heat with oil. Saute the chicken until it is cooked through, remove from heat and set to the side. Add the vegetables to the pan and saute. Cook the lo mein noodles according to directions on the package and set to the side. Whisk together the soy sauce, chicken stock, honey, brown sugar, ground ginger, garlic and cornstarch. Once the vegetables are tender stir in the noodles, chicken and sauce. Toss it all together. When the sauce begins to thicken, remove from heat and serve.

Grilled Brown Sugar Balsamic Chicken


I love an easy grilled chicken recipe and this one was perfect and so flavorful! My kids devoured all of theirs and were asking for more even though there wasn't any more! This recipe is from Delightful E Made.

3-4 boneless skinless chicken breasts
1/2 cup balsamic vinegar
1/3 cup olive oil
3 tbsp brown sugar
2 tsp minced garlic
1/2 tsp ground pepper
1/2 tsp salt

Whisk the balsamic vinegar, olive oil, brown sugar, garlic, pepper and salt together. Place the chicken in a ziploc bag and pour the marinade over the chicken. Let marinate for 3-8 hours. Grill chicken over medium heat 6-8 minutes on each side or until the chicken is cooked through.

Grilled Chicken Pitas


New favorite! This chicken had great flavor since it was grilled and I loved topping it with fresh ingredients and tzatziki. Everyone devoured this meal.

3 boneless skinless chicken breast
4 tbsp olive oil
4 tbsp lemon juice
2 tbsp plain greek yogurt
1 tbsp red wine vinegar
2 tsp minced garlic
2 tsp salt
1 tsp thyme
1 tsp oregano
1/2 tsp black pepper
4 pitas
cucumber
tomato
lettuce
tzatziki

Whisk together the olive oil, lemon juice, plain greek yogurt, red wine vinegar, garlic, salt, thyme, oregano and black pepper. Place chicken breasts in a plastic ziplock bag and pour the marinade over the chicken. Marinate for 1-12 hours.  Heat grill over medium high heat and grill the chicken for 7-9 minutes on each side or until the chicken is cooked through. Let sit for 5 minutes then slice and place on the pita with toppings.

Honey Garlic Chicken Stir Fry


This recipe was a great dinner, it was easy to make and had great flavor.  It was filling and while my kids weren't thrilled with the broccoli they were happy with everything else. This recipe is from Dinner at the Zoo.

3 tbsp olive oil
1 cup sliced carrots
2 cups chopped broccoli
2 boneless skinless chicken breasts (cut into bite size pieces)
4 cloves garlic (minced)
1/4 cup chicken broth
1/4 cup soy sauce
3 tbsp honey
2 tsp cornstarch
salt and pepper

Heat 2 tbsp of oil in a skillet. Saute the broccoli and carrots for 4 minutes or until tender. Remove from skillet and place in a bowl and cover. Add the remaining oil to the pan and saute the chicken until it is cooked through. Stir the garlic into the chicken then stir the vegetables back in. In a small bowl whisk together the chicken broth, soy sauce and honey.  In a separate bowl whisk together the cornstarch with 1 tbsp cold water. Pour the soy sauce mixture over the chicken and vegetables then stir well. Stir in the cornstarch mixture and let heat until the sauce begins to thicken. Remove from heat and serve over rice.

Grilled Garlic Lime Taco Chicken


Chicken legs are not my favorite but my people just love them so I make them.  This recipe was really flavorful and so easy!

10-12 chicken legs
3 tbsp olive oil
3 tbsp lime juice
2 tsp minced garlic
1 packet taco seasoning

Whisk together the olive oil, lime juice and garlic. Pour over the chicken legs then toss in taco seasoning. Grill over medium high heat for 12-15 minutes or until the chicken is cooked through.

BLT Chicken Salad


A friend shared this recipe with me and I flipped out over it! This chicken salad is amazing, the twist of it is perfection! It would be great on crackers or croissant but I served them on little slider buns to make them easy to pick up and eat! This recipe is from Lemon Tree Dwelling.

2 cups rotisserie chicken
1/2 cup crumbled cooked bacon
1/2 cup chopped arugula
1/3 cup diced grape tomatoes
1/2 cup mayonnaise
2 tbsp milk
1/2 tsp dried parsley
1/2 tsp garlic powder
1/2 tsp onion powder

Mix together the rotisserie chicken, bacon, arugula and tomatoes. In a small bow whisk together the mayonnaise, milk, parsley, garlic powder and onion powder.  Toss the chicken mixture into the mayonnaise mixture. Refrigerator for at least 1 hour before serving.

Individual BBQ Chicken Stromboli


Well this was one of the recipes that I just couldn't get a great picture of but was delicious! I love anything I can customize per person. Someone wants a little more cheese, no problem, someone doesn't want onions, easy! These also reheated very easily in the oven the next day.

Thin Crust Pizza Dough
3 chicken breasts (cooked and shredded)
1 1/2 cups bbq sauce
3 cups shredded mozzarella cheese
1/2 cup red onion (diced)
1 egg

Heat oven to 400. Mix together the chicken and bbq sauce. Divide the pizza dough into 6-8 equal pieces. Roll them out and fill with chicken, cheese and red onion. Roll up and seal tightly. Place on a parchment lined sheet pan. Whisk the egg and brush it over the dough. Bake for 15-20 minutes or until cooked through.

Crock Pot Chicken Burrito Bowls


I love any kind of meal that can easily be customized for each person and that exactly how these were. Super simple to throw in the crock pot and everyone was happy putting whatever toppings they wanted on their own burrito bowls.

2 large boneless chicken breasts
2 tsp onion powder
2 tsp garlic powder
2 tsp chili powder
2 tsp cumin
1/2 tsp salt
1 (15oz) can diced tomatoes
1 1/2 cup chicken broth
2 cans black beans
2 cup uncooked instant brown rice
colby jack cheese
toppings: salsa, guacamole, sour cream, lettuce, onions

Mix together the onion powder, garlic powder, chili powder, cumin and salt. Rub the chicken breasts with the seasoning and place in the bottom of the crock pot. Top with diced tomatoes and chicken broth. Cook on low for 6 hours. Shred the chicken and stir in the black beans and let cook for another 30 minutes. Cook the instant rice according to directions. Place the rice in the bottom of the bowl then top with the chicken mixture, cheese and other toppings.

Baked Buffalo Chicken Nuggets


Sometimes it takes me a while to blog a recipe and it has nothing to do with how good the recipe actually was. I just don't get to it or it doesn't fit into my flow...whatever that means and then I finally get to it and wonder why it wasn't posted earlier. I made this recipe for the Super Bowl and it was the perfect football pick up food!  This recipe was adapted from The Stay at Home Chef.

3 boneless skinless chicken breasts
3/4 cup Frank's Buffalo Wing Sauce
1 cup plain bread crumbs
1/2 tsp salt
1/2 tbsp italian seasoning

Cut the chicken breasts into bite size piece. Place in a seal-able container and toss in buffalo sauce. Place in the refrigerator for 3-6 hours. In a bowl combine the bread crumbs, salt and italian seasoning. Heat oven to 400.  Coat each piece of chicken in the bread crumbs and place on a lightly greased sheet pan.  Bake for 25-30  minutes or until the nuggets are cooked through.

BBQ Chicken Quesadillas


Quesadillas are always a hit in our house, they are easy to make and easy to eat plus everyone can top them anyway they want.  This recipe was adapted from Weary Chef.

2 boneless skinless chicken breasts
2 tbsp olive oil
salt and pepper
1 cup bbq sauce
1/2 cup frozen corn
2 cups shredded monterey jack cheese
4 medium size tortillas

Cut the chicken into bite sized pieces, season with salt and pepper. Heat olive oil over medium heat in a skillet and sautee the chicken until it is cooked through. Turn the heat down to low and stir in the bbq sauce and corn. Let simmer for 10 minutes. Heat a separate skillet over medium low heat. On half of the tortilla layer cheese, the chicken mixture and then fold over. Flip and brown on both sides. Repeat with the remaining tortillas. Serve with a side of sour cream.

Loaded Chicken Tostadas


These chicken tostadas are so easy to make! With the chicken cooked in the crock pot all you have to do is layer them and throw them in the oven for a few minutes then they are done!

1 recipe crock pot mexican shredded chicken
8 tostada shells
1 can refried beans
2 cups shredded monterrey jack cheese
toppings: lettuce, tomato, salsa, sour cream, guacamole

Heat oven to 350.  Place the tostada shells on a lined sheet pan. Spread a spoonful of refried beans over the shell then top with chicken and cheese. Bake for 12-15 minutes in the oven. Remove and top with your choice of toppings.

Creamy Tomato Italian Parmesan Chicken


This chicken has been on my "must make" list for a while and I'm glad I finally got to it. The sauce was so easy to make yet it had such great flavor.  This recipe is adapted from The Recipe Critic

3 tbsp olive oil (divided)
4 chicken breast cutlets
1 small onion (diced)
2 cloves garlic (minced)
1 (15oz) can tomato sauce
1/2 cup heavy cream
1 tsp italian seasoning
salt and pepper to taste 
1/2 cup shredded parmesan cheese
1 box spaghetti noodles (cooked according to directions)

In a large skillet heat 2 tbsp olive oil. Season the chicken with salt and pepper on both sides then cook the chicken over medium heat for 3-5 minutes on each side or until it is cooked through. Remove the chicken to a plate and cover to keep warm and moist. Add the remaining olive oil to the skillet and saute the onion until tender then stir in the garlic for 30 seconds. Pour in the tomato sauce, heavy cream, italian seasoning and salt and pepper to taste. Bring to a simmer then add the chicken back to the pan. Top with parmesan cheese and let melt before serving over pasta.

Chicken Bacon Florentine Fettuccine


Those little Tasty videos on facebook get me every time! I've made several of the recipes and they've always been pretty good. I mean they do have some weird ones out there so I usually try to stick with the more normal and delicious sounding ones!

2 tbsp olive oil
2 chicken breasts (sliced into thin strips)
2 cups spinach
1 cup tomatoes (diced)
6 strips bacon (cooked and crumbled)
1 tsp salt
1/2 tsp pepper
2 cups milk
1 box fettuccine 
1 cup shredded parmesan

Heat the oil in a pot over high heat. Cook the pasta in a separate bowl according to the directions on the box.  Cook the chicken in the pot until it is cooked through. Stir in the spinach, tomatoes, bacon, salt and pepper and cook until the spinach is wilted. Pour in the milk and bring to a boil. Stir in the pasta and let cook until the milk has thickened up and is coating the pasta then remove from heat. Add the parmesan cheese and stir until it is melted. Serve warm.

Crock Pot Honey Garlic Chicken


Sometimes the most delicious recipes are born out of recipes that you think are one thing (because you never read fully through) and then realize, wait, that's not what I want to make for dinner!  Ha! That's what happened on the day I made this recipe.  It was just sort of thrown together and ended up being great!

3 chicken breasts
1 cup chicken broth
1/2 cup honey
2 tbsp soy sauce
1 tbsp hot sauce
6 garlic cloves (minced)
2 tsp onion powder
1/2 tsp salt

Place the chicken in the bottom of the crock pot.  Whisk the chicken broth, honey, soy sauce and hot sauce together. Stir in the garlic cloves, onion powder and salt. Pour over the chicken breasts. Cook on low for 6-8 hours.  Remove the chicken from the crock pot and shred.  Add back to the crock pot and cook for 15 more minutes then serve.

Cheesy Chicken Bacon Sliders


I made these when we got together with friends the other day, I made three pans of these and every single one was gone at the end of the night! These are great for a party or tailgating!

3 cups shredded chicken
8oz cream cheese (softened)
2 tbsp butter (softened)
1/2 cup cheddar cheese
1/3 cup bacon bits
1 pack pull apart dinner rolls
3 tbsp honey mustard
1 tbsp honey
1/2 cup butter
1 tbsp poppy seeds

Heat oven to 350. In a mixing bowl using a hand held mixer combine the cream cheese and butter.  Add the cheddar cheese. Then add the bacon bits and chicken.  Do not pull apart the dinner rolls, cut them in half and place in the bottom of a 9x11 pan  Spread the chicken mixture over the rolls then place the top on. Cut the rolls into sliders.  In a small bowl melt the butter then whisk in honey mustard, honey and poppy seeds. Pour the mixture over the sliders.  Cover and bake for 15 minutes then remove the foil and bake for 3 more minutes. Serve warm.
