Greek Turkey Meatballs

Okay, these are one of my new favorites! They are adapted from Skinny Taste, I love that I can eat them and not feel guilty! Plus I adore Tzatiki Sauce so these were perfect. You MUST make the tzatiki to go with them!!! Gray and I both really enjoyed these, they were so much lighter and will be a great summer recipe!

1 lbs lean ground turkey
1 cup zucchini, grated and liquid squeezed out
1/2 cup seasoned breadcrumbs
1 large egg
2-3 cloves garlic, grated
1/4 red onion, grated
1 tbsp dried oregano,
2 tbsp dried parsley
kosher salt and fresh pepper

Mix ingredients together, be careful not to over mix. Form meatballs. Cook the meatballs in a frying pan with a tiny bit of olive oil. Serve warm!

Sweet and Sour Meatball Kabobs


This recipes was adapted from Taste and Tell. It was fun and different for the grill. We enjoyed them and will be having them again!

32 frozen fully cooked meatballs, thawed (1 lb.)***
1 red pepper, cut into 1-inch squares
1 green pepper, cut into 1-inch squares
1 sweet onion
1/4 cup apricot jam
1/4 cup BBQ sauce

Heat up the apricot jam and mix in the BBQ sauce. Heat the grill to medium. Skewer the meatballs and vegetables and coat with the glaze. Grill for 8 to 10 minutes and enjoy!

***I made my own turkey meatballs for this recipes, I just mixed a pound of turkey, 1/3 cup of bread crumbs, an egg, salt and pepper and mixed in a tablespoon of BBQ sauce.

Turkey Teriyaki Meatballs

(ignore the gross oven in the background, I never claimed to be a clean cook :) )

The recipe is adapted from Betty Crocker Low Fat and Fit Cookbook 3/25/96.
Okay so you might laugh at the former comment but my mom has so many of those little grocery store check out cookbooks, I snagged a ton of them from her house and marked the recipes I wanted to try. So far I have loved the new recipes!



1 pound ground turkey

1/3 cup seasoned dry bread crumbs

1 egg

1 cup chicken broth

1/3 teriyaki sauce

2 cups sliced mushrooms

1 medium bell pepper sliced

1 large zucchini sliced

1 tablespoon cornstarch

2 tablespoons water



Mix turkey, bread crumbs and egg. Divide into meatballs. (Mine made 20) Cook meatballs in 12-inch skillet over medium high heat 5 minutes or until brown on all sides; reduce heat.



Mix broth, teriyaki sauce and pour into skillet . Cover and simmer for 10 minutes. Stir in vegetables and cook for 3 minutes. Remove meatballs from skillet.



Mix cornstarch and water; stir into sauce in skillet. Cook 1 to 3 minutes stirring constantly until thickened and bubbly. Remove from heat. Stir in meatballs.



Serve over rice.

Ravioli Lasagna

1 lb lean ground beef
1 (28 ounce) jar any kind spaghetti sauce
1 (25 ounce) package frozen cheese ravioli
6 ounces shredded mozzarella cheese

In a large skillet, cook beef over medium heat until no longer pink; drain.
In a greased 2 1/2-quart baking dish (a 13x9-inch glass baking dish works very well also), layer a third of the spaghetti sauce, half of the ravioli, beef, and 1/2 cup of cheese.
Repeat layers.
Top with remaining sauce and cheese.
Cover and bake at 400°F for 40-45 minutes or until heated through.

I added a teaspoon of dried basil and a teaspoon of garlic powder to my spaghetti sauce but I always do that. So So easy! And as always you could sub ground turkey for ground beef!

Taco Pie




This recipe comes straight from my mom. We ate this a lot growing up! It was so easy, she could put it together earlier in the day and throw it in the oven to reheat it! Because we ate it growing up it's one of my favorite comfort foods.

1 Package of Crescent Rolls
1 pound of Lean Ground Beef or Ground Turkey
8oz Tomato Sauce
1 oz of Taco Seasoning
1 Cup of Mexican Blend Cheese

Grease a 8x8 pyrex or round pyrex dish. Preheat oven as directed on the Crescent Rolls. Make a pie crust style bottom in the pyrex out of the crescent rolls and bake in the oven until done. While baking the crust brown the meat then drain. Mix in the tomato sauce and the taco seasoning When the crust is done add the meat on top and top with cheese. Put back in the oven until the cheese is melted. Top with Salsa, Sour Cream, Gauc, Lettuce, Tomato, Avocado...whatever you like.

California Turkey Burgers

1 1/4 lbs lean ground turkey
1 (1 ounce) package dry onion soup mix
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
1 1/2 tablespoons soy sauce
monterey jack cheese or monterey jack pepper cheese

In a large bowl combine ground turkey, soup mix, pepper, garlic powder, soy sauce and egg.
Put mixture in the refrigerator for 5 to 10 minutes, then take it out and shape into patties.
Cook until the inside of the burger is whitish in color.
Top with Salsa, Avocado, Onion, and Lettuce.

***Because of the soy sauce it is hard to tell if the burgers are whitish in color but you can tell when they are done.
