Cheddar Chive Biscuits

The southern girl in me is always happy with a plate full of biscuits and these were certainly no exception.  These biscuits plus a little spread of butter, yum! This recipe is from Crazy for Crust.

3 cups flour
4 1/2 tsp baking powder
1 tsp salt
1/2 tsp pepper
1/2 cup cold unsalted butter (plus 1 tbsp for brushing)
1 cup buttermilk
1 1/2 cups shredded cheddar cheese
1 tbsp chopped chives

Heat oven to 425. In a large mixing bowl whisk together the flour, baking powder, salt and pepper. Cube the butter into small pieces and mix it in using a fork or pastry blender.  Make a well in the center of the flour mixture and pour in the buttermilk. Mix until the dough comes together. Stir in the cheddar cheese and chives. On a floured surface, roll out the dough until it's about 1/2 inch thick. Cut the biscuits and place on a lightly greased sheet pan. Brush with 1 tbsp of melted butter. Bake in the oven for 17-20 minutes.

Maple Glazed Pumpkin Bread

Pumpkin season is upon us. While I am no fan of the PSL, I will take pumpkin baked goods all day every day. And this pumpkin bread was delicious.  My two year old wanted some of the "cake", I wasn't sure what she would think since it was pumpkin flavored but she loved it and probably ate half of it over the days that followed.  I'm sure the maple glaze had nothing to do that it...ha. This recipe is adapted from Six Sisters Stuff.

Bread
2 eggs
1 cup pumpkin puree
1/2 cup vegetable oil
1 cup sugar
3/4 tsp pumpkin pie spice
1 1/2 cups flour
1/2 tsp salt
1 tsp baking soda

Glaze
1 1/2 cups powdered sugar
4-5 tbsp maple syrup
1-2 tbsp milk

Heat oven to 350.  Grease a standard size loaf pan. In a large mixing bowl whisk the eggs. Whisk in the pumpkin, oil, sugar and pumpkin pie spice. Stir in the flour, salt and baking soda. Pour into the greased pan and bake for 50 minutes or until the bread is cooked through. Let cool for 10 minutes before removing from the pan.  Let the bread fully cool off before making the glaze. To make the glaze whisk together the poured sugar, maple syrup and milk until it reaches the desired consistency. Pour the glaze over the bread.

Yep, these are a copycat of those delicious blueberry biscuits from that wonderful southern friend chicken fast food chain. You know the one. I love their sweet biscuits and these turned out great!

1 cup milk
1/3 cup sugar
5 tbsp butter + 1 tbsp butter
4 tsp baking powder
1 tsp salt
1/2 cup blueberries

1 tsp vanilla extract
3-4 tbsp milk

Place 5tbsp butter in the freezer for 10 minutes. Heat oven to 450. In a mixing bowl combine the flour, sugar, baking powder and salt. Stir in the milk. Using a grater, grate the butter into the mixture and stir well. Knead the dough for 1 minutes then fold in the blueberries. Spread the biscuit dough out on a floured surface and cut the biscuits. Place on sheet pan and bake for 8-11 minutes. Remove from oven and brush with 1 tbsp of melted butter.  Whisk together powdered sugar, vanilla extract and milk. Glaze the biscuits and serve.

1 Hour Skillet Focaccia Bread

I had been wanting to make focaccia bread for a while, I love the texture and taste of it but so many recipes are time consuming, I'm not good at time consuming. When I stumbled across this recipe on Crunchy Creamy Sweet, I had to try it, and I'm so glad I did! It's a new family favorite.

Dough:
3/4 cup warm water
1/2 tsp sugar
1 1/2 tsp dry active yeast
2 tbsp olive oil
2 cups flour
1/2 tsp salt
Topping:
3 tbsp butter
1 tbsp grated parmesan cheese
1/2 tsp italian seasoning

Grease the skillet if necessary. In the bottom of a mixer, stir warm water and sugar together until the sugar is dissolved. Stir in the yeast and let sit for 5 minutes or until foamy.  On low speed add 1 cup of flour, salt and olive oil then mix until combined. Gradually add in the remaining cup of flour until the dough begins to pull away from the sides. Heat the oven to 220. Once the oven is preheated turn it off but keep the door closed. Roll the dough out on a floured surface and fold over several times until it is smooth. Shape back into a ball then place in the skillet and stretch to the sides. Cover with a towel and place in the oven for 20  minutes. Remove from oven and heat the oven to 400. Make indentions in the dough with fingers. In a bowl melt the butter then stir in the grated parmesan cheese and italian seasoning.  Brush half of the mixture over the dough.  Bake in the oven for 20-25 minutes or until golden brown. Remove from oven and brush with the remaining butter.

Amish Sweet Bread

I've made a ton of breads over the past few years and many never seen this website.  This is by far one of the best bread recipes I've ever made. The texture of it is spot on and the sweetness makes it so delicious.

2 cups warm water
2/3 cups sugar
1 1/2 tbsp yeast
1 1/2 tsp salt
1/4 cup vegetable oil
5 - 6 cups flour

Combine the warm water, sugar and yeast in the bottom of a stand mixer. Once the mixture is foamy add the oil and salt to the mixture. Using the dough hook attachment to mix add one cup of flour at a time stopping at 5 cups. If more flour is needed at in 1/4 cup scoops until the dough is no longer sticky. Mix for 5 minutes. Place the dough in a greased bowl, cover with a towel and let rise for 1 hour. Punch down the dough and divide into two even balls. Shape and place into 9x5 loaf pans and let rise for 30 minutes. Bake at 350 for 30 minutes. Remove from oven and let cool in pan for 3 minutes then remove from pan and let cool completely.

Cornbread Muffins

There always seems to be a debate about if corn kernels are a good thing or bad thing in cornbread. Personally, I can go either way on that matter.  Good cornbread is good cornbread! And these little muffins were winners.  This recipe is adapted from Joyously Domestic.

1 cup yellow cornmeal
1 cup whole milk
1 cup flour
2 tsp salt
1/4 cup sugar
2 tsp baking powder
1 egg
6 tbsp butter (melted)
3/4 cup frozen corn (thawed)

Heat oven to 375. Mix together the cornmeal, flour, salt, sugar and whole milk. Then add in the egg, butter and corn. Stir until it is just combined. Grease or line a muffin tin. Fill 3/4 full. Bake for 18-22 minutes or until the muffins are cooked through. Remove and let stand for 5 minutes before removing from muffin tin.

Banana Bread

So my kiddos always go from loving bananas and eating them faster than I can keep them in the house to not touching them at all and then I'm left with a bunch of brown bananas. And what do you do with a bunch of brown bananas? Make a simple banana bread of course!

1 tsp baking soda
1/4 tsp salt
1 egg
1 cup sugar
1/2 cup canola oil
2 tbsp milk
1/2 tsp vanilla extract
3 ripe bananas (mashed)

Heat oven to 325. Grease a loaf pan.  Combine the flour, baking soda and salt in a mixing bowl. In a separate bowl combine the egg, sugar and oil.  Stir the dry ingredients into the wet then add the milk, vanilla extract and mashed banana. Pour into the loaf pan and bake for 50 to 65 minutes or until the bread is cooked through.  Let cool in the pan for 10 minutes then remove to a wire rack to continue cooling.

Gingerbread Loaf with Cinnamon Cream Cheese Frosting

I love all things gingerbread! Well except the gingerbread latte, that does not sound good to me at all. But gingerbread cookies, gingerbread muffins, gingerbread loaf, all of it. I feel like it's highly underrated and that makes me sad, it deserves a lot more love.  I adapted this recipe from Le Creme De La Crumb.

1 1/2 cups flour
2 tsp cinnamon
1 tsp ground cloves
2 1/4 tsp ground ginger
1 tsp salt
1/2 cup butter (softened)
1 cup sugar
1 cup unsweetened applesauce

3 tbsp butter
3 oz cream cheese
3 cups powdered sugar
1/2 tsp vanilla extract
1/4 tsp cinnamon
4-5 tbsp milk

Heat oven to 350. Grease a 9x5 loaf pan.  In a bowl whisk together the flour, cinnamon, ground cloves, ground ginger and salt.  In a separate bowl cream together the butter, sugar and applesauce. Stir the dry ingredients into the wet until combined. Pour into the loaf pan and bake for 45-55 minutes or until a toothpick comes out clean. Remove from oven and let rest for 5 minutes then flip out of the pan and let cool on a wire rack. When the loaf has cooled completely, make your frosting. In a medium size mixing bowl cream together the butter and cream cheese then add in the sugar, cinnamon, vanilla extract and milk until it reaches the desirable consistency.  Spread over the loaf and serve.

Garlic and Herb Italian Bread

My son has always liked bread but recently he's just crazy about garlic bread and the different ways you can make it. He's a funny kid!  I decided to try this recipe and see what he thought and he loved it. It had great flavor and was the perfect side with our Chicken Parmesan Stuffed Shells! This recipe was adapted from The Dainty Chef.

1 loaf of your favorite Italian Bread
5 tbsp butter
1 tbsp olive oil
2 cloves minced garlic
1/2 tsp salt
1 tsp dried parsley

Heat oven to 375.  Slice the bread but leaving the very bottom still connected to the whole loaf. In a small sauce pan melt the butter and olive oil together. Stir in the garlic and salt then cook for 2 minutes. Stir in the parsley. Spread the butter mixture in between each slice of the bread. Wrap in tin foil and bake for 15 minutes. Unwrap and bake for 5 additional minutes. Remove and serve.

Cheddar Garlic Quick Bread

I wanted to make an easy bread recipe one night with dinner and I came across this recipe on Love Bakes Good Cakes.  It tasted like a loaf version of Red Lobster's cheddar biscuits. Weird confession, I've only eaten there once but I've had many of their copycat biscuit recipes.  Anyways, if you love those biscuits, you will love this bread.

3 cups self rising flour
1 cup shredded sharp cheddar cheese
1/4 cup sugar
1 tsp garlic powder
1/2 tsp italian seasoning
1 1/2 cups milk
1/4 cup vegetable oil
1 egg

Heat oven to 350.  Grease a loaf pan and set aside.  Whisk together the flour, cheese, garlic powder and italian seasoning. In a separate bowl whisk together the milk, oil and egg. Stir the wet ingredients into the dry until just combined. Pour into the greased pan. Bake for 50 to 65 minutes or until it's baked through. Remove and let cool for 10 minutes in the pan then let cool on a wire rack.

English Muffin Bread

For years I have said I was going to make this bread. I had a friend rave about it a long long time ago and so many times I've meant to make it and then just haven't. Well I finally did and it was everything and more!  First of all, it's EASY!!!! Secondly, toast it a little and spread your favorite preserves, jelly, jam, fruit butter on it and you are set!

5 1/2 cups flour
2 3/4 cups warm water
1 1/2 tbsp yeast
1 tbsp salt
1 1/2 tbsp sugar

In a large bowl combine the warm water, yeast, salt and sugar. Stir until it has dissolved.  Add two cups of flour and stir well.  Mix in the rest of the flour until it is combined but it will still appear lumpy. Transfer into a greased glass bowl. Cover and let rise until it doubles in size (45 minutes to 1 hour). Heat oven to 350. Carefully divide into two halves. Gently place into two greased loaf pans. Bake in preheated oven for 30 minutes.  Remove from oven and immediately remove from pan then place on a wire rack on it's side to cool.

Broccoli Cornbread

My mom and her neighbor love to share recipes. They will make something then give the other person half of it to try.  My mom was raving about this broccoli cornbread that Mrs. Annette brought her the other week so I had to make it to see what all the fuss was about.  I have to say I really loved it! It was so moist and just totally different from traditional cornbread but a good different.  It was a great side dish to a big bowl of soup!

1 pkg Jiffy Cornbread Mix
1/2 pkg Chopped Frozen Broccoli
3/4 cup Cottage Cheese
1 stick butter (melted)
2 Eggs

Heat oven to 400. Mix together the cornbread nix and chopped broccoli.  Stir in the cottage cheese, butter and eggs. Pour into a well greased 8x8 pan and bake for 20-25 minutes or until the top is golden brown. Let sit for 5 minutes before cutting.

Pimento Cheese Biscuits

Pimento Cheese is like it's own food group in the south. Everyone has their own unique take on it and it's hard to pick a favorite.  When I go back home to South Carolina I usually have 3 or 4 different pimento cheeses while there because...well why not?  When I saw these biscuits I just had to try them out and they did not disappoint. Recipe from Southern Bite.

2 1/2 cups self-rising flour
1/2 tsp salt
1 tsp sugar
1/2 cup butter
1 cup buttermilk
3oz jar diced pimentos
1 1/2 cups shredded sharp cheddar cheese

Heat oven to 475. In a bowl combine the self-rising flour, salt and sugar.  Cut the cold butter into cubes and cut it into the flour mixture with a pastry cutter or fork until it becomes a crumbly mixture. Stir in the buttermilk. Drain the pimentos well then add to the biscuit mixture along with the cheese. Fold the biscuit mixture several times to combine. Flour a smooth service and pat the dough into a circle that is 1/2 inch to 3/4 inch thick. Using a small biscuit cutter, press out the biscuits and place in a buttered dish. Bake for 13 to 16 minute or until the biscuits are just starting to brown.

30 Minute Dinner Rolls

I have made a few different "quick roll"type recipes over the years but this has been my best results so far!  They were so easy too.  This recipe came from Stick a Fork in It.

1 cup + 2 tbsp warm water
1/3 cup oil
2 tbsp yeast
1/4 cup sugar
1/2 tsp salt
1 eggs
3 1/2 cups flour

Heat oven to 400. In a stand mixer combine the water, oil, yeast and sugar. Let it sit for 15 minutes. Using a dough hook mix in the salt, egg and 2 cups of flour until combined then add the remaining flour 1/2 cup at a time.  Shape the rolls (12 for larger rolls, 24 for smaller rolls) and place on a greased sheet pan.  Let them rise for 10 minutes. Bake in the oven for 10 minutes.
