Apple Brie and Honey Grilled Cheese


I love a yummy grilled cheese recipe and this is a copycat of one of my favorite sandwiches from one of my favorite food trucks, the big cheese.

2 slices of hearty bread
4-5 slices brie
4-5 thinly sliced granny smith apple
honey
1 tbsp butter

Place half the butter into a hot skillet then place one piece of bread down in the butter.  Place the brie on the bread then top with the apple and a drizzle of honey then the last slice of bread.  Let cook until the bread begins to brown then melt the remaining butter and flip the sandwich.  Cook until brown on both sides and the cheese is slightly melted.

Cheeseburger Meatball Sandwiches


Both of my children are currently loving meatballs of any kind. My oldest LOVES meatball sandwiches so I thought this was a fun twist on it! They turned out great and everyone loved them!

Meatballs:
1lb ground beef
1/4 cup finely diced onion
1 egg
1 tbsp worchestershire sauce
1 tbsp ketchup
1/2 tsp garlic salt
pepper to taste
1/2 cup panko

Sauce:
8oz tomato sauce
1/3 cup ketchup
1 tbsp mustard
1 tbsp worchestershire sauce
1/4 tsp onion powder
pinch of pepper

4 Hoagie Rolls
8 slices cheddar cheese 

Heat oven to 400. In a bowl combine the ground beef, onion, egg, worchestershire, ketchup, garlic salt and pepper until combined. Stir in the panko. Form the meatballs and place in the bottom of a greased baking dish. Bake for 25 minutes or until cooked through.  While the meatballs are baking, make the sauce by whisking all the ingredients together in a pot then heating until hot.  Once the meatballs are done, place them in the sauce and let them sit for 5 minutes. Then place the meatballs on the rolls, top with cheddar cheese and serve.

Marghertia Pizza Grilled Cheese


Just looking at the picture of this sandwich is making me want another one right now! Fresh mozzarella, basil, pizza sauce, garlic perfection!!! The perfect summer lunch!

8oz fresh mozzarella
6 slices white bread
handful fresh basil
1/2 cup pizza sauce
1/4 cup melted butter
1/4 tsp garlic salt
1/4 tsp dried parsley

Mix together the melted butter, garlic salt and parsley.  Heat skillet over medium low heat. Slice the mozzarella and chop the basil.  Spread the butter mixture on one side of the bread and place down in the skillet. Later pizza sauce, mozzarella, basil, more pizza sauce and then top with another slice of bread brushed with the butter mixture. Once the sandwich browns, flip and brown on the other side. Repeat with remaining sandwiches. Remove, slice and serve.

Crock Pot Mushroom and Onion Italian Beef Sandwiches


I love a good crock pot recipe and these sandwiches were so tender and flavorful. Everyone was very pleased with them at dinner time.  This recipe was adapted from Will Cook for Smiles.

4 cups beef broth
1 chuck roast
1 garlic bulb
1 1/2 tsp dried basil
1 1/2 tsp dried parsley
1 tsp dried oregano
1 tsp dried thyme
1 large yellow onion
1/2 tbsp sugar
1 tsp salt
1 cup sliced fresh mushrooms
6 club rolls
6 slices provolone cheese

Place the chuck roast in the bottom of the crock pot. Using a sharp knife cut slits in the top of the roast and place the garlic cloves down in the beef. Sprinkle the basil, parsley, oregano, thyme, sugar and salt over the roast. Cut rings of the onion and place on top. Pour the beef broth over the top of the roast and cook on low for 6-8 hours.  Remove the chuck roast from the crock pot and shred. Place back in the crock pot and stir in the mushrooms. Let cook for 30 minutes. Slice the club rolls and layer the with beef mixture and provolone cheese then serve.

Garlic Bread Grilled Cheese Sandwich


I made these sandwiches when I made tomato soup one night and they were spectacular. They stole the show for sure.  This is a new favorites for sure. This recipe is adapted from Blog Chef.

4 tbsp salted butter
1 tbsp olive oil
2 garlic cloves (minced)
1 tsp dried parsley
8 slices white bread
4 slices provolone cheese
4 slices mozzarella cheese

Melt the butter then stir in the olive oil, garlic cloves and dried parsley. Let sit fro 3 minutes. Heat a griddle to medium heat brush the outside of each slice of bread with the butter mixture then place one slice of provolone and one slice of mozzarella on the inside. Cook the sandwiches on the griddle until they are golden brown on each side. Remove and serve.

Crock Pot BBQ Ranch Chicken Sandwiches


This was a recipe born out of plans changing and trying to make dinner out of what I had on hand! These sandwiches turned out great, the ranch seasoning gave them a nice tangy taste and the chicken just fell apart.

2-3 boneless skinless chicken breasts
1 jar bbq sauce
1 ranch seasoning packet
buns 

Place the chicken in the bottom of the crock pot.  Whisk together the bbq sauce and ranch seasoning. Pour the bbq sauce mixture over the chicken and cook on low for 7-9 hours. Shred the chicken and serve on lightly toasted buns.

Buffalo Chicken Grilled Cheese


These sandwiches are such a great way to use leftover shredded chicken from a different recipe. They are quick and easy to throw together and add a great kick to lunch time!

2 slices bread
1/2 cup shredded chicken
4 tbsp buffalo sauce
2 slices mozzarella cheese
1 tbsp butter

In a small bowl combine the shredded chicken and buffalo sauce. Place a slice of cheese on either slice of bread then spread the buffalo chicken in the middle. In a skillet melt half of the butter over medium heat and place the sandwich in the skillet. Once it has browned melt the other half of butter and flip the sandwich. Remove once it has browned.

Oven Baked Meatball Sandwiches


I threw these together on a whim one night when we were craving meatball sandwiches. 

1 recipe Italian Meatballs (cooked)
1 jar Marinara Sauce
Sliced Mozzarella Cheese
Italian Bread or Sandwich Rolls

Heat oven to 400. Make sure the meatballs and sauce are both warmed. Slice the bread or rolls. Place several meatballs inside of the bread and top with sauce and then two slices of cheese.  Wrap the sandwich in tin foil and place in the oven for 5-8 minutes. Remove from oven and serve.

Turkey Club Pinwheels


Every other week we rotate bringing snacks to our small group under a  different category, sweet, salty or main.  I whipped these up for our main dish a few weeks ago and they were a huge hit. You can put different dipping sauces on the side, I did honey mustard.

8 Whole Wheat Sandwich Wraps
1 1/2 lbs sliced deli turkey
2 lb cooked bacon
16 pieces  thin sliced cheddar cheese
16 pieces thin sliced provolone cheese
2-3 tomatoes (sliced thin)
shredded lettuce

Lay out the wrap on individual pieces of tin foil.  Layer 2 pieces of cheddar then two pieces of provolone on each wrap.  Top with 3-4 pieces of turkey then 2-3 slices of bacon. Layer a few slices of tomato down the center then top with lettuce. Roll up tightly and wrap the foil around the sandwich wrap. Place in the refrigerator for at least 2 hours.  Remove from refrigerator and slice into 1 inch pieces. Keep refrigerated until time to serve.

Pepperoni Pizza Meatball Subs


We love meatball sandwiches so I knew this would be a hit in out house! Meatballs plus pepperoni! Sold! This recipe is adapted from Lauren's Latest!

2 tbsp olive oil
1/4 cup finely diced onion
2 cloves minced garlic
salt & pepper to taste
1/4 tsp dried basil
1 pound ground beef
2 cups pizza sauce
1/2 cup water
1 1/2 cup grated mozzarella cheese
20 slices pepperoni
4 sub rolls

In a mixing bowl combine the ground beef, diced onion, garlic, basil, salt and pepper.  Form into meatballs.  Heat oil over medium heat and saute meatballs for 2 minutes on each side. Add the pizza sauce and turn down heat so the sauce is simmering.  Stir in the water, cover and cook for 15 minutes or until the meatballs are done.  Slice the sub rolls and place meatballs inside. Top with mozzarella and pepperoni and place under the broiler on high until the the cheese is melted.

California Grilled Cheese


These were such a fun sandwich!  They were easy to put together making for the perfect quick dinner! This recipe is adapted from Lauren's Latest.

Bread
Butter (softened)
Tomato (sliced)
Sliced White Cheddar Cheese
Bacon (cooked)
Thinly Sliced Pepper Turkey Breast
Avocado (sliced)

Heat up a pan over medium heat.  Spread the butter on two pieces of bread.  Layer a white cheddar slice, turkey, bacon, tomato, avocado then another slice of white cheddar and top with another slice of bread.  Grill over medium heat until both sides are browned. Remove and serve.

Garlic Bread Meatball Sliders


Oh man, I love meatball sandwiches.  These little sliders were awesome.  They would make a great tailgating dish in the fall!

1 recipe of Italian Meatballs
1 Jar Pasta Sauce
12 Slider Rolls
12 Slices Mozzarella Cheese
3 tbsp Butter (melted)
Garlic Salt

Once your meatballs are baked, place them in a pot and pour the pasta sauce over them.  Let them simmer in the pasta sauce for 15 minutes.  Separate the slider rolls and place on a sheet pan.  Brush with melted butter and sprinkle lightly with garlic salt.  Place under the broiler until they begin to toast.  Remove from oven.  Top with one meatball and a slice of cheese.

Shredded BBQ Chicken Sandwiches


When I saw this recipe on Mostly Homemade Mom, I knew it was one I needed to try! It looked easy enough and easy is always a win!  Plus since only two of us would be eating this I knew it would make leftovers...another plus!  These turned out great, the BBQ sauce was way more flavorful than I imagined and we really enjoyed the sandwiches.

3 boneless skinless chicken breasts (cooked and shredded)
1 cup ketchup
1 3/4 cup water
1/4 cup brown sugar
1/4 cup Worcestershire sauce
1/4 cup apple cider vinegar
2 tbsp dried minced onion
1 tsp chili powder
8 slices sharp cheddar cheese (optional)
8 hamburger rolls

In a pot combine the ketchup, water, brown sugar, worchestershire sauce, apple cider vinegar, dried onion and chili powder.  Bring to simmer and cook for 15 minutes.  Turn the mixture down to low heat and add the chicken.  Cook for 10 minutes.   Lightly toast the buns under the broiler, add cheese to hot buns if desired.  Add the BBQ Chicken to the sandwiches and serve.

Broccoli and Cheddar Grilled Cheese


When I saw this recipe I needed to make them right away.  I had such high hopes for these sandwiches and they sure didn't disappoint.  I'm not sure I will ever make a regular grilled cheese again.  I served them with Creamy Basil Tomato Soup and it was a delicious dinner.  This recipe is from Domestic Superhero.

1/2 medium yellow onion (chopped)
1 large head of broccoli (chopped well)
7 tbsp butter
6 slices sharp cheddar cheese
1 garlic clove (minced)
salt and pepper
6 slices bread

Melt 4 tablespoons of butter over medium heat in a skillet. Saute the onion and saute for a minute then add in the garlic and saute for another minute.  Stir the broccoli in and continue cooking for 5 minutes stirring often or until the broccoli is tender.  Remove from skillet and place in a bowl.  Wipe out the skillet and turn the heat to low.  Melt 1 1/2 tablespoons of butter in the skillet.  When the better is melted put down 3 slices of bread, layer 1 pieces of cheese, 1/3 of the broccoli mixture, another slice of cheese and top with the remaining slices of bread.  Once the sandwiches have browned on one side, melt the remaining butter and flip and cook on the other side.  Remove from skillet and serve.

Marlboro Man Sandwich


This is an old Pioneer Woman recipes that I have made a ton of times.  Not sure why it has taken me so long to share it.  This is one of my husband's absolute favorite sandwiches. We slightly adapt it by adding cheese.


1 Large Onion (sliced)
1 1/2 sticks Butter
2 lbs Cube Steak
Lawry's Seasoned Salt
1/2 cup Worcestershire Sauce
Franks Hot Sauce to taste
4 whole French/deli Rolls
4 slices Provolone Cheese

Melt 1/4 cup of butter in a skillet.  Saute the onions in the butter until tender. Remove and set to the side. Slice the cube steak against the grain and season with Lawry's seasoning salt.  Melt 2 more tablespoons of butter in the skillet. Add the meat to the skillet in a single layer.  Brown on both sides and add the worchestershire sauce, hot sauce and 2 tablespoons of butter to the skillet.  Add the onions back to the skillet. Butter the rolls and place under the broiler until they are slightly browned.  Place the steak mixture in the roll and top with cheese. Serve while warm.

Buffalo Chicken Cheesesteaks


We love all things buffalo in our house. We also love cheesesteaks.  Combine the two and it has to be the best thing ever...right?  Well let me answer that for you, right!  Gray and I both loved these!!!! The recipe is from Iowa Girl Eats.

2 tbsp butter
1 sweet onion (sliced)
1lb chicken breasts (sliced in thin strips)
salt and pepper
1/2 cup Frank’s Buffalo Wing Sauce
8 slices provolone cheese
4 hoagie rolls

Heat oven to 250.  In a skillet over medium heat melt the butter and saute the onion until tender, add the chicken and saute until it's cooked through.  Season with salt and pepper then add wing sauce and stir.  Separate the chicken into four different sections and top with provolone cheese. Cover until cheese is melted.  Place into hoagies, wrap in foil and place in the oven for 10 minutes. Remove from oven and serve.

BTAE Breakfast Sandwich



This is by far my favorite breakfast sandwich combination!  Something about the creamy avocado, salty tomato, runny egg and tomato just all works!!! This recipe makes 4 sandwiches.

1 Avocado (sliced)
1 lb bacon (fried crispy)
2 Tomatoes (sliced)
4 Eggs
8 slices Whole Wheat Bread
Mayo (optional)

Toast the bread.  Fry the eggs until the white are solid but the yolk isn't cooked through.  Spread a thin layer of mayo on 4 slices of bread.  Layer a piece of plain toast with bacon, avocado, tomato, egg and then the slice of bread with mayo.  Serve warm.

Grilled Meatball Subs


I saw this recipe on Bev Cooks and just knew I had to make it right away. Of course I adapted it to fit our taste a bit more. Gray and I are both big fans of the meatball sub and what is better than grilling food?  The combination of these two things makes it a winner!!! These were awesome sandwiches.

1 lb ground beef
1tbsp worcestershire sauce
1 tbsp soy sauce
3/4 tsp dried parsley
3/4 tsp dried oregano
1/2 tsp garlic salt
1/2 tsp onion powder
1/4 tsp red pepper flakes
1/3 cup panko
2 cups marinara sauce
8 slices fresh mozzarella
4 sub rolls

In a mixing bowl combine the ground beef, worcestershire, soy sauce, parsley, oregano, garlic salt, onion powder, red pepper flakes and panko.  Form the meatballs.  Heat the grill to medium high heat and place the meatballs on the grill.  Remove the meatballs when they are cooked through.  Place the sub rolls down on the grill to get them a bit toasted.  Remove from grill, place the meatballs in the sub rolls, top with marinara sauce and fresh mozzarella cheese.  Either place under the broiler for a few minutes or back on the grill for a minute to allow the cheese to melt.  Serve right away.

Bacon, Avocado and Tomato Sandwich with Homemade Ranch Aioli


This little creation came about after I made the Bacon Cheddar Ranch Pub Sliders.  I had tons of the ranch aioli left and this sandwich was just asking to be created.

2 pieces of bread (toasted)
4-6 slices of bacon (cooked)
1/2 avocado (sliced)
1 tomato (sliced)
ranch aioli 

Spred the ranch aioli on the toasted bread.  Layer the tomato, avocado and bacon. Cut in half and enjoy.

Avocado Dill Sandwich


A few weeks ago I went out of town for a retreat with a bunch of other adoptive mother's,  a group of us all road from the airport to the hotel and then back.  Before our flights out we decided to grab lunch together at a deli in the airport and I got the Avocado Dill Sandwich then proceeded to fall in love!!!  I am not a big fan of deli meat so I always struggle with what to fix for lunch and this has been the perfect sandwich!

1 Ciabatta Roll
1 Slice Provolone Cheese
1/2 Sliced Avocado
2 Slices of Tomato
Sliced Red Onion
Mayo
Dry Dill

Toast the bread then spread mayo on it.  Sprinkle with as much or as little dill as you like.  Layer avocado, tomato, red onion and cheese.  Eat right away.
