Easy Peanut Butter Fudge


This fudge is so simple to make and is absolutely delicious. I made it then took it to small group last night and everyone went crazy over it! It was the perfect treat to make with my younger who is 3, she could easily help me stir the butter and peanut butter. The process was also super quick so she didn't get distracted or frustrated.

1 cup unsalted butter
1 cup creamy peanut butter
1 tsp vanilla extract
4 cups powdered sugar

Line an 8x8 pan with parchment or wax paper. Place the butter and peanut butter in a microwave safe bowl. Heat in 30 second increments until it is melted and smooth. Stir in the vanilla extract.  Whisk the powdered sugar to break it up then stir it into the peanut butter mixture.  Keep stirring until it all comes together into one ball. Press into the pan and chill for 2 hours in the refrigerator. Cut and store in the fridge.

White Chocolate Cinnamon Pretzels


I made a double batch of these pretzels then put them in snowman cellophane gift bags to pass out to our neighbors and they turned out so cute! I also took some to small group and everyone loved them! They have that salty sweet thing going on and are absolutely addicting. This recipe is from Life In The Lofthouse.

16oz pretzel twists
2/3 cup vegetable oil
1/2 cup sugar
1 1/2 tsp cinnamon
1/2 cup of cinnamon sugar mixture for sprinkling
1 bag white chocolate chips

Whisk together the vegetable oil, sugar and cinnamon. Place the pretzels in a large microwave safe bowl then toss with the vegetable oil mixture. Heat in the microwave for 1 minute then stir and heat for another 45 seconds. Spread out over parchment or wax paper. Sprinkle with the cinnamon sugar mixture. Melt the white chocolate in the microwave, in 30 second increments, stirring in between until fully melted. Drizzle over the pretzels and let sit until the white chocolate has set.

Puppy Chow


Puppy chow, muddy buddies, whatever you call them this is a classic! Everyone seems to make their recipe slightly differently but this is how I make it!

1 (12 oz) box Crispix
2 cups semi-sweet chocolate chips
1 cup smooth peanut butter
5 tbsp butter
1 lb powdered sugar

In a sauce pan melt together the chocolate chips, peanut butter and butter.  Stir together over low heat until it is completely melted. Pour the cereal into the chocolate mixture and stir until it is covered. Place half of the powdered sugar into a 2 gallon ziplock bag. Add the coated cereal then pour in the remaining powdered sugar and carefully shake to coat.  Place in an airtight container to store.

Butterscotch Peanut Butter Clusters


These make the perfect little holiday treats for a party or gift basket and they are super easy to make! My 9 year old helped me stir and enjoyed putting these all together. This recipe is from Crazy for Crust.

11oz butterscotch chips
1/4 cup creamy peanut butter
3 cups cornflakes

Cover two baking sheets with wax paper and set to the side. Place the butter scotch chips and peanut butter in a microwave safe bowl and heat for 30 seconds then stir. Continue to heat for 30 seconds while stirring in between until the mixture is smooth.  Carefully stir in the cornflakes until they are coated with the butterscotch mixture. Drop spoonfuls of the mixture onto the lined baking sheets then place in the refrigerator for 45 minutes or until they are set.

Triple Layer Cracker Toffee Bars


Have you ever had Cracker Toffee before? This is like that but on over drive! It's so amazing and rich.  I made this one night when friends were over, I have to say a few were unsure but ones they tried it they were completely sold. So delicious! This recipe is from Pillsbury.

1 box buttery rectangle crackers
1 (14oz) can sweetened condensed milk
1 cup packed brown sugar
1/2 cup butter
1/4 cup milk
1 (11.5oz) bag milk chocolate chips

Line a 13x9 pan with foil then generously grease with cooking spray. Layer crackers evenly on the bottom of the pan. In a pot combine the sweetened condensed milk, brown sugar, butter and milk and cook over medium heat while the butter melts. Continue to stir and increase the heat to medium high. Bring to a boil and let boil for 5 minutes while stirring constantly. Pour 1/3 of the mixture over the crackers. Put down another layer of crackers then pour another 1/3 of the mixture then finally do the last layer of crackers and mixture. Sprinkle milk chocolate chips on top and place in a 300 degree oven for 4 minutes or until the milk chocolate chips have softened then spread them out over the top of the crackers. Cool in the refrigerator for 3 hours or until set before slicing.

Cracker Toffee


I learned about cracker toffee many years ago from a friend of a friend.  I have had it several times since but never made it myself until recently.  It might be one of my favorite new things! So easy and so yummy.  Oh my oh my! I could have eaten the whole cookie sheet by myself but I resisted!

2 sleeves Saltine Crackers
1 cup Butter
1 cup Light Brown Sugar
1 1/4 cup Semi Sweet Chocolate Chips

Heat oven to 425.  Line a cookie sheet with tin foil and grease. Lay out the crackers in a single layer. Melt the butter in a pot over medium heat then stir in the brown sugar and bring to a boil.  Let boil for one minute then pour over the crackers. Place in the oven for 3 to 5 minutes. Remove from oven and sprinkle with chocolate chips and let sit for 5 minutes. Using a knife spread the chocolate over the toffee. Let cool then break apart into pieces.
