Buffalo Chicken Wrap



We love to buy a batch of fresh chicken fingers from our local grocery store then use them over the weekend to make sandwiches and wraps.  Everyone can customize them to what they like and they are easy to throw together. The buffalo chicken wrap is a popular one in our house!

1 burrito size tortilla
2 chicken fingers
1/4 cup Frank's buffalo sauce
2 tbsp blue cheese dressing
diced tomato
lettuce

Heat chicken fingers in a 400 oven for 4 to 6 minutes.  Remove from oven and chop the chicken fingers into bite size pieces. Toss in buffalo sauce and place in the center of the tortilla. Layer with blue cheese dressing, tomato and lettuce. Wrap up and serve.

Spicy Chicken Wrap


Mmmmm wraps.  This is one of our favorite Saturday lunches! It's so easy and filling. Make it, right now, you won't regret it.

4 Herb and Spinach Wraps
8 Chicken Fingers
4 slices Pepper Jack Cheese
1 Avocado (diced)
1 Large Tomato (diced)
Shredded Lettuce
Spicy Ranch Dressing

Heat up the chicken fingers.  Spread spicy ranch dressing on the wrap, layer with cheese, chicken fingers, lettuce, tomato and avocado.  Wrap up and serve.

Chicken Finger Wrap


When we moved two years ago one of the things that I was most worried about was grocery shopping. I loved my local Publix and couldn't imagine life without my fabulous grocery store.  We had a good thing going.  Then we moved and I discovered the magic of Wegmans.  Don't get me wrong, I still love Publix and think it's one of the best grocery stores out there but now that I have shopped at Wegmans I'm not sure I can ever go back.  But there are still a few things I really miss about Publix and one of them is their Chicken Finger Subs/Wraps.  The chicken fingers at Wegmans just don't cut it but thankfully the chicken fingers at the Harris Teeter down the street do and thus I made my own chicken finger wrap!

2 Spinach and Herb Wraps
3-4 Chicken Fingers (heated)
2 sliced Cheddar Cheese
Honey Mustard Dressing
Lettuce
Tomato
Onions

Lay out the wrap and cut the cheese sliced in half then lay across the wrap.  Top with the sliced chicken fingers then drizzle with honey mustard.  Top with the lettuce, tomato and onions.  Wrap up, slice in half and enjoy.

Easy Chicken Pitas



I was going to make a different recipe this night but I pulled some chicken out of the freezer to thaw out and it was insanely freezer burnt. It was so weird because none of the other chicken previously was freezer burnt at all. Grrrr. And those were my last chicken breasts.  I got Gray to grab a rotisserie chicken on the way home and this recipe was created!

1 Rotisserie Chicken
1 Recipe of Tzatziki Sauce
1 Cucumber (cubed)
2 Tomatoes (diced)
1 Onion (sliced)
Feta or Mozzerella Cheese
4 Pitas

Shred the chicken and heat.  Toss with cucumber, tomato and onions.  Toss with Tzatziki using as much or as little as you desire. Warm the pita in the oven.  Top pita with chicken mixture and cheese. Serve right away.

Turkey Avocado Wrap



This is one of my favorite things to make for lunch. It's quick and easy to throw together and I can even make it earlier in the day and have it later if I know our day is going to get crazy.  This recipe makes 1 wrap.

1 Whole Wheat Tortilla
3 Slices of Turkey Breast
1 Slice of Colby Jack Cheese
Sliced Avocado
Diced Tomato
Lettuce
Onion
Mayo

Spread a bit of mayo on the tortilla. Place the cheese on the tortilla, then the turkey, then layer with the remaining toppings. Roll up the tortilla, burrito style and either wrap in foil for later or eat right away.
