Lasagna Stuffed Bread


I got this recipe from Cassie Craves, I think I have raved about her recipe blog before! Some of my favorite recipes have come from her blog. This was delicious and I need to make it again soon if my little one will stop being so picky! In fact, I might make it next week anyway!


1 pack crescent rolls
1 lb ground beef
1 medium onion (chopped)
2 cloves garlic (chopped)
3 tsps Italian seasoning, divided
Salt and pepper to taste
1 6 oz can tomato paste
1 8 oz pack cream cheese (softened)
2 tsp parsley flakes
1/2 cup grated parmesan cheese
2 cups shredded mozzarella cheese
2 tbsp butter (melted)
1 tsp garlic powder

Heat oven to 375. Unroll the crescent rolls and divide into two squares. Cook the ground beef and onion in a skillet, add 2 tsp of Italian Seasoning , garlic, salt and pepper. Stir together and cook for 30 seconds. Reduce heat and add the tomato paste, let cook for 5 minutes. While that's cooking combine the cream cheese, parsley, parmesan, and a bit of black pepper in a small bowl. Put the meat layer onto a square of the crescent rolls then put the cream cheese layer down then top with mozzarella. Add the remaining square of crescent rolls and pinch the ends together. In a small bowl mix together the melted butter, garlic powder and remaining Italian seasoning. Brush over the top of the crescent roll crust. Bake for 20 to 25 minutes and let stand for 5 minutes before cutting.

Baked Zucchini Fries


Oh how I love these Zucchini Fries!!! I found the recipe over at Our Best Bites. These will be made again very soon, they were delicious and so good!

1 lb Zucchini
1/2 Cup Italian Seasoned Panko
1/4 Cup Parmesan Cheese
2 Eggs

Heat oven to 425. Slice the Zucchini into Strips. Mix up the Egg. Combine the Panko and Parmesan in a bowl. Dip the Zucchini into the Egg then into the Panko Mixture. Lay on a foil lined baking sheet that is coated with nonstick spray. Continue until all the Zucchini is coated. Bake for 10 to 12 minutes then flip and bake for 10 to 12 more minutes. Serve warm.

Mashed Sweet Potatoes



Yum!!! I love sweet potatoes and so does Gray. These were a fun and different way to make them for a crowd! Everyone loved them, but what's not to love? This recipe is from Vintage Victuals.

4 sweet potatoes
2 tbsp butter
1/4 tspn salt
3 tbsp milk
1 egg
2 tbsps brown sugar

Boil the sweet potatoes in water until they are fork tender. Remove from water and remove the pulp from the potato, cut the potato pulp with a knife to prevent it from being stringy. Place the pulp into a bowl and add butter, mash well using a potato masher. Let the mixture cool off for a few minutes. Add the remaining ingredients. Mix together well. Pour into a greased baking dish. Heat oven to 375 and bake for 20 to 25 minutes.

Greek Turkey Meatballs

Okay, these are one of my new favorites! They are adapted from Skinny Taste, I love that I can eat them and not feel guilty! Plus I adore Tzatiki Sauce so these were perfect. You MUST make the tzatiki to go with them!!! Gray and I both really enjoyed these, they were so much lighter and will be a great summer recipe!

1 lbs lean ground turkey
1 cup zucchini, grated and liquid squeezed out
1/2 cup seasoned breadcrumbs
1 large egg
2-3 cloves garlic, grated
1/4 red onion, grated
1 tbsp dried oregano,
2 tbsp dried parsley
kosher salt and fresh pepper

Mix ingredients together, be careful not to over mix. Form meatballs. Cook the meatballs in a frying pan with a tiny bit of olive oil. Serve warm!

Crescent Chicken


Oh this was delicious!!! The recipe was found on Comfy in the Kitchen and it was simple and I had all the ingredients on hand! Love recipes like that!

1 package refrigerator crescent rolls (regular or jumbo)
2 cups chopped cooked chicken
1 cup shredded cheddar cheese
1 can cream of chicken soup
1 can of milk (using soup can to measure)

Heat oven to 350. Roll out the crescent rolls, place a few pieces of chicken in the center along with a bit of cheese then roll up. Repeat and place the bundles into a 9 x 11 dish. Mix together the chicken soup and milk in a separate bowl then pour over the crescent bundles. Bake for 30 minutes.

Farm Style Spaghetti and Meatballs


LOOK, I am finally posting recipes again, please someone, anyone, be excited!!!

I got this recipe from Anissa's Kitchen and we LOVED it.  These meatballs were awesome as was the sauce! It will be made again!

Meatballs:

2 pounds ground beef
1 envelope Lipton Onion Soup Mix (I only used half a package)
1 egg
1/2 cup breadcrumbs
1 1/2 teaspoons Italian Seasoning

Mix all the ingredients together with your hands and shape into meatballs. Place in a large pot then follow directions below.

Sauce:

1 Large can (I believe it is 29oz) Hunt’s Tomato Sauce
1/2 of can of water
2 Teaspoons Italian seasoning
1 envelope Lipton Onion Soup Mix
1 pinch ground cloves

Stir together all ingredients. Add to the pot with the meatballs. Bring sauce to a boil, stirring every so often. Reduce from high heat to medium heat and cook for 30 to 45 minutes depending on the size of you rmeatballs. Serve over spaghetti noodles, add a small amount of the pasta water to the sauce to help it stick to the noodles!

Oven Roasted Asparagus


We eat a descent bit of asparagus in our house, this is a simple and quick way to fix it that we both enjoy. I originally learned this method from the Pioneer Woman but I know a lot of people fix it this way.

1 Bunch of Asparagus
4 tbsp Olive Oil
Salt to taste
Fresh Ground Pepper to taste

Heat to 425. Wash the Asparagus and cut the bottom off of it. Dry off the asparagus. Place the asparagus in a single layer. Drizzle with olive oil then sprinkle with salt and pepper. Roast for 10 minutes.

Salmon with Lemon and Dill


We love Salmon at our house! This is a very basic recipe that I saw at Kacey's Kitchen but it is also exactly how my mom use to fix it when I was growing up.

4 Salmon Filets
2 Lemons
Salt
Pepper
Fresh Dill

Heat oven to 250. Season the salmon with salt and pepper. Sprinkle with fresh chopped dill. Finely slice the lemons and layer on top of the salmon. Place in a baking dish or on a cookie sheet covered with foil and sprayed with cooking spray. Bake for 30 minutes.

Chicken Bacon Sandwich aka Marlboro Man's Second Favorite Sandwich


Oh my, seeing this picture again is making me want this sandwich right now! This is a fantastic Pioneer Woman Recipe! So easy and yummy!

4 Boneless Skinless Chicken Breast
Lemon Pepper Seasoning
8 Strips of Bacon
Cheese Slices (Cheddar, American, Colby Jack, whatever you like)
Rolls (we like to use Onion Rolls)

Pound the chicken breast out till it is a uniform thickness, you don't want to make it to thin. Season all chicken breast with lemon pepper on both sides. Fry bacon in frying pan, remove when done. Reserve 1 tablespoon of bacon grease. Add Chicken and bacon grease back to frying pan. Cook chicken breasts for 4 minutes on each side. Place 2 slices of bacon on top of each chicken breast, top with cheese and let it melt. Meanwhile toast the buns lightly in the oven. Place chicken breast on top and serve.
